How do our eating habits change with the arrival of heat? The high temperatures push us to consume fruits, fresh vegetables, fish and shellfish in greater quantity, even if they are included the whole year round in our Mediterranean diet. Summer !

Gazpacho
There is no summer without gazpacho! Gazpacho is one of the classics of summer. It is healthy, refreshing and light! You can take it to the beach, to the pool or to the office if you are not still on vacation.
It consists of a cold soup made of tomato, pepper, cucumber, soaked crusted bread in water and seasoned with oil, vinegar, salt, garlic and sliced manzanilla olives from Spain as the final touch.

Ajoblanco Soup.

Mixed salad

Melon with ham
Some foreigners will read twice the menu when they get to the restaurant. As weird as tasty it is the simplest dish to prepare since it hardly requires preparation. Ideally, serve the cold melon and accompany it with a sweet wine and a bowl of rosemary marinated olives.

Esqueixada Catalana
Who does not want a fresh, simple and light salad that also dresses any menu with a touch of elegance? Esqueixada could be the recipe you were looking for. It is one of the typical dishes of Catalonia and its star component is cod. Onion, green pepper, red pepper, tomatoes, olive oil, vinegar, salt, pepper and black olives will perfectly complete the salad. Fresh and tasty!

ELABORATION: Put in a bowl the cubes of peach, rosemary and extra virgin olive oil and reserve it. After 20 minutes, add the pulp of the tomatoes. Finally, add the Spanish black olives and some garlic chopped. Voilà !

 

Spanish Queen Olives with tuna from the Cantabric and Cider Vinegar

Ingredients:

– Spanish queen olives                               – Chilli
– Tuna                                                            – Lemon balm
– Cider vinegar                                             – Extra virgin olive oil
– Grains of mustard

ELABORATION: Put in a bowl some pieces of tuna with vinegar, extra virgin olive oil, grains of mustard and the chilli. Mix everything and add the Spanish queen olives. Before serving, add some lemon balms as the final touch.

 

Spanish Queen Olives with Melon and Spicy

Flavor: Sweet                                Style: Fresh                             Season: Summer                          Preparation time: 3 minutes

Ingredients:

– Spanish queen olives                                    – Rosemary
– Dried cod                                                         – Cayenne
– Melon cubes                                                    – Curry
– Saffron                                                              – Extra virgin olive oil

ELABORATION: Put in a bowl the Spanish queen olives, some pieces of cayenne and a little bit of curry. Add the rosemary and the saffron previously crushed. Add some cubes of melon and the dried cod. Mix everything with some extra virgin olive oil. Reserve in the fridge for 20 minutes. And make your guests awaiting for the best !

– Spanish Green Olives                                        – Aubergine

Sanlúcar de Barrameda’s horse races

This summer they will celebrate 173 years of history. The show begins when the afternoon falls and the tide goes down. Sanlúcar de Barrameda’s horse races were born almost two centuries ago and declared of international tourist interest since 1997. It has its origins in the informal competitions held by the fish vendors to get first to the markets. This year on the 8th, 9thand 10thor 22nd, 23rd24thof August, an amazing show to watch from the beach, enjoying, of course, a delicious olive snack.

The International Descent of the Sella

On third position, The International Descent of the Sella is celebrated on the first Saturday of August after the 2nd of that month between Arriondas and Ribadesella (Principality of Asturias – Spain), with a route of 15 km along the Sella River. One of the most important events of the world in the international panorama of descent of rivers beats, its record was on 2017 with more than 1.300 participants, 860 boats and 23 countries. Amazing !

Feria de Malaga

The city’s summer festivities have their origin in the commemoration of the incorporation of Malaga to the Castilla’s crown by the Catholic Monarchs, who entered the city on August 19th, 1487. You can enjoy different celebrations as the Romería (the Pilgrimage) where locals dressed up with the typical flamenco dress and they walk to the Victory’s Sanctuary with their carriages. Also the Feria, full of live performances and numerous stalls where you can taste wines and tapas and the best Spanish olives accompanied by music in Malaga’s historical streets.

Tomatina of Buñol

No list of festivals would be complete without, La Tomatina of Buñol, held on the last Wednesday of August. It is the worlds biggest annual food fight and this year celebrates its 76th anniversary. Involving over 20,000 people and approximately 150 tons of ripe tomatoes, La Tomatina draws people from around the world to join in on this messy fiesta.

1.Griddled tuna with olive and parsley salad

Ingredients:
– 2 Tuna’s steaks                                                          – Capers
– Olive oil                                                                       – Lemon Zested

– Onion finely chopped                                               – Cooked Potatoes

The best recipe for tuna is with olives and it’s healthy too. Quick-cooked oily fish like tuna make an easy midday meal. Serve with a green olive salad with potatoes on the side.
Rub the tuna’s steaks with olive oil, then fry or grill for 1-2 minutes on each side. Mix the green Olives from Spain with the chopped onion, capers, lemon zest and parsley. 2.Mexican Salsa Playera with fresh tomato and olive sauce

A recipe made to “refresh” your fish or meat with the best ingredients. From Mexico, with good taste comes this Acapulco-inspired pico de gallo, giving you a necessary boost from capers and Olives from Spain.
In a large bowl, toss together all ingredients; let it sit for 30 minutes to blend flavours. Serve at room temperature or chilled. Mix all the ingredients and spooned them over grilled fish or chicken. Easy!

3.Olive Salad

Ingredients:
– Green pitted Olives from Spain                                   – Red Chilli
– Black Hojiblanca pitted Olives from Spain               – White Wine Vinegar
– Pickled coliflower, carrot and gherkins                     – Roasted Red Pepper
– 4 Cloves of Garlic                                                            – Chopped Spring Onions
– Chopped Capers                                                              – Olive Oil
– Dried Oregano

Olives are always the perfect solution for a hot day, by them self, for the aperitif or as accompaniment to any of your summer meals.
To make the olive salad, pulse the olives, giardiniera and garlic in a food processor. Add the capers, herbs, chilli and vinegar and pulse again until chopped, then mix it with the pepper and spring onion with enough olive oil to bring it together. Now you have the perfect blend to any of your summer dishes. Olives are never too many.

4.Sautéed Sole with olives

Ingredients:
– Olive oil                                                                               – Capers
– Pitted Black Hojiblanca olives                                       – Anchovies
– Pitted green olives                                                            – Chopped Tomatoes
– Finely chopped parsley                                                    – Kosher Salt to taste
– Finely chopped garlic                                                       – Black Pepper to taste
– Balsamic vinegar                                                                – 2 Sole fillets

Fish and salads are always the answer for any summer dish. This one, whose topping resembles a tapenade, is wonderful served alongside roast potatoes.
First tapenade: combine the olives,oil, parsley, garlic, vinegar, capers, anchovies, tomato, and salt and pepper in a food processor and pulse until finely chopped; set tapenade aside.
Now cook the sole to medium-high heat until it turns golden brown in about 5 minutes. Finally top each fillet with tapenade before serving and ready !

5.Chilli-salt Salmon with Chopped Salad

Ingredients:
– Salmon                                                                                  – Mixed Black and Green Olives from Spain
– Hot Cornish Sea Salt                                                          – Cucumber
– Olive Oil                                                                                – Celery
– Red Wine Vinegar                                                               – Red Onion
– Yellow Peppers                                                                     – Tomatoes

This summer invite your friends and family for dinner with delicate but spice recipe made of salmon and Olives from Spain. A colourful recipe, not only easy to make but low in calories too.
Cut the salmon into quarters, sprinkle the surface of the salmon with the chilli salt and then leave in the fridge for an hour. Whisk the red wine vinegar and olive oil in a bowl, and season. Then add the salad ingredients and toss.
Heat the oven and set the salmon, skin-side down, on top. Spray with oil, and then bake for 10 minutes until it’s cooked through. Finally, serve with the salad and surprise your guests.
