September bring us different mixed feelings. The end of the summer but the beginning of a new course. The weather starts to cool down from the summer high temperatures and we are willing to get home and enjoy a cozy dinner. Here we show you a couple of recipes made with Spanish ingredients for an extra boost in our way back to school.
Black Hojiblanca Olive Chip Biscuits
Level of difficulty: Medium Servings: 3 / 4 people Prep Time: 45 minutes
– Minced Black Hojiblanca Olives – Eggs
– Pastry Flour – Baking Soda
– Sugar – Butter
Pour the flour in a bowl and add a spoon of baking soda. Separately in another bowl put together the butter (help yourself heating it a bit for a smooth performance) and the sugar for a perfect blend and the mix all together with an egg.
Once is all good mix, let’s leave it in the refrigerator for around 15 minutes and finally shape them into small balls to bake at 350º for 15 minutes.
A sweet you have never tried before will be ready !

A roasted eggplant purée typical of Arabic, Mediterranean and Israeli cuisine also called babaganoush. Check it out !
– 1 large aubergine or 2 medium – Olive oil
– 1 small clove of garlic – Gordal with peppers from Spain
– Tahini – Pitted Hojiblanca Olives from Spain
– 1/2 lemon juice – Pitted Manzanilla Olives from Spain
– Cumin, salt and pepper
We start by wrapping the aubergines in tin foil and bake in the oven to 200ºC for 45′ until the aubergines are soft.
Once the aubergines are roasted, we wait for them to cool down. We put them in the blender together with the pitted manzanilla and hojiblanca olives from Spain and the rest of the ingredients; garlic, tahini, lemon juice, coriander, cumin, salt and pepper to taste.
In a different bowl add the delicious manzanilla olives stuffed with pepper together with the diced red onion. Mix with some olive oil and add it to the paté as a topping. Ready ! We have our aubergine pate !
Farm chicken confit with lemon and green olives
Level of difficulty: Medium Servings: 3/4 people Prep Time: 55 minutes
– 150g of green olive from Spain – Olive Oil
– 1 farm chicken from 1.3 to 1.5 kg – Butter
– 1 bouquet of thyme strawberry – Water
– 8 garlic cloves – Salt and Pepper
In a dish, place the chicken and coat it with soft butter. Then season the chicken with salt and pepper.
Cut 2 lemons into thick strips and slide inside and on the sides of the chicken. Add the fresh thyme and the garlic cloves. Surround everything with olives. Finally, pour a drizzle of olive oil and add a small glass of water. Now we bake for 2 hours.
PS: Don’t forget to water it regularly until is ready.
